Oven Roasted Broccoli\r
4 cups broccoli florets\r
2 cloves garlic, minced\r
2 tbsp olive oil\r
salt and pepper\r
½ lemon, zest and juice\r
¼ cup freshly grated parmesan\r
\r
Preheat oven to 425°F.\r
Toss broccoli florets in olive oil, minced garlic, salt and pepper until\r
well coated.\r
Pour onto baking sheet.\r
Bake for 10-15 minutes.\r
Top with lemon zest, lemon juice and freshly grated parmesan.\r

Broccoli Slaw\r
4 broccoli stalks, shredded\r
2 small carrots, shredded\r
1 cup red cabbage, shredded\r
1 apple, shredded\r
½ cup plain yogurt\r
2 tbsp apple cider vinegar\r
2 tbsp honey \r
salt and pepper\r
\r
In a small bowl, combine yogurt, apple cider vinegar, honey, salt and\r
pepper. \r
Whisk well and set aside.\r
In a large bowl, combine broccoli stalk, carrots, red cabbage and\r
apple.\r
Add dressing a toss well.\r
Enjoy!\r

Vegetable Stir Fry\r
1 tbsp oil\r
4 cups broccoli florets\r
1 red bell pepper, seeded and chopped\r
1 yellow bell pepper, seeded and chopped\r
1 clove garlic, minced\r
1 tsp ginger, freshly grated\r
½ chili pepper, minced OR chili flakes\r
¼ cup vegetable OR chicken broth\r
1 tbsp soy sauce\r
1 tbsp honey\r
green onions, finely chopped\r
cashews, crushed\r
\r
In a wok or non-stick frying pan, heat oil over medium-high.\r
Add red bell pepper, yellow bell pepper and broccoli.\r
Cook for 2-3 minutes stirring often.\r
Using a wooden spoon, create a small well in the broccoli mixture.\r
Add garlic, ginger and chili and toss with broccoli mixture.\r
Cook for an additional 30 seconds.\r
In a small bowl, whisk vegetable broth, soy sauce and honey.\r
Pour over broccoli and cook 2-3 more minutes.\r
Serve over rice and garnish with chopped cashews and green onion.\r
