Medu Vada is a South Indian dish that goes along with Coconut Chutney and Sambar as the Side Dish, I have enjoyed Medu Vada as a kid and even do it now as an Adult with family and friends :)\r

250 gms Urad Dal\r
\r
150 ml Water\r
\r
01 tsp Salt\r
\r
01 Onion (Medium)\r
\r
01 Green Chilli\r
\r
500 ml Cooking Oil\r
\r

\r
1) Wash and Rinse the Urad dal with Water, atleast 3 times, to remove dirt and starch.\r
\r
2) Soak the Urad dal in 150 ml of water (Ural dal should be submerged in water) and keep it aside for 4 hours in a bowl.\r
\r
3) After 4 hours you will observe the dal has slurped/drank the water and bloated up and risen its level in the bowl.\r
\r
4) Create a thick batter of this dal by adding it to a mixer and only add very little water if required while grinding the dal in the mixer.\r
\r
5) A simple test is when youve ground the Urad dal into a thick batter, the colour should be white and not yellow, if its yellow you need to grind more.\r
\r
6) Now extr the Urad dal batter to a bowl, add salt and stir it well for 3 minutes using a spoon / spatula inorder to fill air into the batter.\r
\r
7) Add Onions and green chillies (optional) and stir once again in clock-wise motion to fill air into the batter and make it smooth.\r
\r
8) Dont wait much time, because onions and salt in the batter will release moisture and tend to make your urad dal batter watery.\r

10) As shown in the video make holes in the batter by placing a large enough ball in your hand and drop them gently into hot oil to deep fry the medu vadas.\r
\r
11) let them deep fry at a medium flame, so that they cook evenly from inside as well as become crip from the outside, serve with chutney / sambar, enjoy :)\r
