Royal Icing Tutorial and Surprise Guest!!

A lot of you have asked about my royal icing recipe so here it is! Plus a visit from our surprise guest who just happens to be our neighbor. Heres a hint. he sings and has been known to keep mung beans in his desk drawer. \r

ROYAL ICING\r

Ingredients:\r

2 lbs bag of powdered sugar\r
5 tablespoons meringue powder \r
2 teaspoons oil-free vanilla extr\r
3/4 cups room temperature water\r

Instructions:\r
\r
1. Add powdered sugar and meringue powder to mixer bowl and mix for 30 seconds using the paddle attachment. (Its not necessary to sift the sugar beforehand)\r
2. While mixing add the vanilla to the water and stir.\r
3. With the mixer on its lowest setting slowly add the water/vanilla mixture to the dry ingredients. As the water is added, the icing will become thick and lumpy.\r
4. Continue to add the remaining water until the mixture reaches a honey like consistency. At this point, turn the mixer to medium speed for 1 minute.\r
5. After the first minute, turn mixer to high speed and mix an additional 2 minutes. \r
6. Immediately remove icing and place in an airtight container.
