The veg kimchi is a great authentic Korean dish. The basic ingredient being cucumber helps to keep the body hydrated. You can side this dish with almost any main course..

Ingredients:
Cucumber-7
Salt
Lemon
Onion-1
Carrot-1
White radish-1
Chillies
Light soy sauce- 1 n 1/2 tbsp
Dark soy sauce - 4tbsp
Homemade Red chilly powder - 200gms
Vinegar - 1/2tbsp


Method:
1)Cut one edge of the cucumber and marinate it with salt.
2) Chop the onion, lemongrass, carrot, white radish and chillies. Add light soy sauce, homemade red chilly powder, dark soy sauce, vinegar and mix it well.
3) Slit the other other edge of the cucumber into four sections.
4) Wash the cucumbers and fill it with the vegetables stuffings.
5) The veg kimchi will be ready.


Homemade spiced red chilly powder:
Ingredients:
Red chilly powder - 100 gms
Cumin seeds - 30 gms
Coriander seeds 30 gms
Garlic- 50 gms
Salt for taste
Vegetable oil - 50ml approx

(Make a paste of all the ingredients mentioned above)
