How to Bake a Yule Log - Traditional French Recipe

Ingredients for the chocolate sponge cake:
• 4 eggs
• 100g/3.5oz sugar
• 75g/2.5oz flour
• 25g/1oz cocoa powder
• a little of water in case you need to moisten the dough

Ingredients for whipped cream with chocolate and crystallized oranges :
• 200g/7oz chocolate
• 150+100g/5+3.5oz of whole single cream
• little crystallized orange cubes

Ingredients for the decoration
• chocolate icing
• 100g/3.5oz chocolate to make the chocolate leaves and to create the log's bark

The finishing touches
• Spread 80g of melted chocolate evenly on a sheet of wax paper using a spatula, and leave it a few minutes in the fridge, until it hardens.
• Prepare a chocolate icing. To do that, you need :
1. 140g dark chocolate
2. 70g sugar
3. 110g butter
4. 15 centiliters of whole milk
• Put the chocolate pieces in a saucepan
• Cover with cream and cook at low heat. Turn off the heat when the chocolate is melted.
• Add the butter pieces and mix well
• Your icing is done; you can use it when it's hot or keep it in the fridge and heat it up when needed.


• Place the log on a cooling rack. Place a plate underneath to catch extra icing
• Cover the entire log with icing, starting at the center and moving to the edges
• Cut the chocolate leaf in pieces of various sizes to create the bark
• Place them on the icing, which should still be slightly liquid.
• You can also add a little powdered sugar
• Let set in the fridge for an hour before serving
